Scale is calcium and magnesium coming out of solution when water is heated, and it plates onto the hottest surfaces first, which means the element. A scaled element has to run hotter to deliver the same heat into the water, which raises energy use, slows recovery and eventually fails.
It also destabilises brew temperature, and unstable temperature is why a machine that used to pull consistent shots starts giving you a different cup every hour. Boiler probes and flow meters scale too, so the machine's own readings drift.
Flavour cuts both ways. Water needs some mineral content to extract properly, generally somewhere around 50 to 175 ppm total hardness for brewing, so over-softening produces a flat, hollow cup. The aim is controlled hardness through a correctly set bypass, not water stripped to nothing.
Your water supplier publishes a postcode hardness lookup. Use that figure, because it determines both cartridge choice and how long that cartridge will actually last.
